Cinnamon banana oatmeal Christmas cookies

Despite the long name, it's REALLY easy to make, so easy that it's a little too good to be true because of its taste that you'll end up craving later.

But let me just tell you, the aroma. Is. UNBELIEVABLE!

Prep time: 10 min

Bake time: 15 min

Total time: 25 min

Yields: 8-15 cookies

 

Ingredients:

  1. 1 ripe banana

  2. 1 egg

  3. 1 cup of oatmeal

  4. 100ml soy milk (or almond milk)

  5. 3 tbsp of cinnamon (add more, or less depending on your preference)

  6. 1 1/2 tsp of baking powder

  7. 1 tbsp of honey

Instructions:

  1. Preheat oven to 180c (356f)

  2. Mash the banana in a small bowl

  3. Crack the egg and mix it well with the mashed banana

  4. Add in the oatmeal

  5. Pour in the milk slowly and mix

  6. Blend in the cinnamon, baking powder and sugar

  7. Scoop out some of the mixture and pop it in the oven

  8. If wanted, add a few nuts, seeds or berries on top (almonds, walnuts, sesame seeds, blueberries, raisins)

  9. Bake for ca 15 min

  10. After baking them to a golden-brown colour, take them out and let them cool down before serving! (sprinkle some cinnamon for extra taste if wanted)
